Gorgeous Eating

Family,

I love, love this salad. You have to try this. Now if you have nut or seafood allergies, this is not for you. Sorry, because it is wonderful!!!

Here goes:

10 oz fresh green beans
1/2 onion
7 oz small cooked shrimp
10 black olives (pitted)
7 oz tomatoes
1 tsp fresh thyme leaves
1 tbs olive oil
Sea Salt to taste
Black pepper to taste
2 oz chopped walnuts
2 tbs cider vinegar
2 oz mandarin oranges

In a skillet, heat the olive oil over medium heat, saute the green beans and onion. Add sea salt, black pepper and thyme. Cook for 10 minutes. Let mixture cool. Add the remaining ingredients and Enjoy. FYI you can substitute the cider vinegar for another light dressing. Keep it healthy!!!

This is good for a light lunch or dinner. I love this salad, and I hope you do as well.
